Monday February 2nd: Chocolate Chickpea Truffles
Substitutions I made:
- almond butter instead of cashew butter
- honey and water instead of maple syrup ( I was low on honey, and the truffles were sweet enough even with less honey)
- I left out sweetener
I gave some of these truffles to Angela, and she shared with some friends who also liked them.
Wednesday February 4th: Spinach Crepes by Green Kitchen Stories
Changes I made:
- added an extra egg and more flour because
- my crepes were not solid enough( they were more like green scrambled eggs)
- added an extra apple in the Chickpea Tahini Filling
Substitutions I made:
- used almond butter instead of tahini
Saturday February 28th: Frosty
Changes I made:
- added more cocoa powder, and added some carob powder
- no ice, and bananas were not frozen( I am in the middle of a Canadian winter here!)
I also made a banana, spinach and almond mylk smoothie. I had 2 smoothies for breakfast, and I do not regret it.
Sunday March 1st: Creamy Chocolate Avocado Smoothie by Against All Grain
Changes I made:
- added more cocoa powder
- added carob powder and a piece of chocolate
- omitted dates and honey
- added cinnamon
- omitted ice
Toppings: Cherry tomatoes and red cabbage
